Ingredients
2 oz Premium Gin
5 oz Fitch & Leedes Indian Tonic
.5 oz Side Plum Syrup
Slice of plum
1 cup extra-fine sugar (use coffee grinder to grind granulated sugar)
1 cup of water
2 Cinnamon sticks
6 ripe plums - save a couple thin slices for garnish

Spiced Plum Gin & Tonic
Add ice to a double low ball or old-fashioned glass.
Add gin and spiced plum syrup then stir gently.
Add a thin slice of plum for garnish, then top the glass with tonic.

Leaving the skins on, remove the pits out of your plums and muddle them in a bowl just enough to release some of the juices.
Add the sugar, water, muddled plums (including as much juice as possible) and cinnamon stick to a thick-bottomed saucepan
Simmer over a very low heat, stirring occasionally, for about five minutes or until the sugar dissolves and the liquid forms a syrup that’s about half the original volume.
Let cool before use.
